School Year Monthly Craft Post: August!

Here's a fun and easy recipe!  I ran across this in one of my mommy mags.  I like having fun new projects that spark amazingly creative ideas!


Frozen Cupcakes




You will need:

Sprinkles
8 Paper/ Silicone/ Foil Cupcake Wrappers
  (Reg/ Mini is fine)
Muffin Tin (if paper wrappers are used)
2 - 3 tsps. Nutella (or other nut butter)
Freezer
Low-fat Yogurt (for super thick cupcakes, try greek yogurt)
Foil/ Parchment Paper
8 Popsicle Sticks

Serves: 8

Calories Per Serving: 120 - 200


1) Shake sprinkles into eight paper wrappers (make sure they are already in the muffin tin, for stability). You can also use silicone or foil cupcake wrappers as well and not need the muffin tin.

2) Spread 2-3 tsps. Nutella (or try mixing equal parts chocolate syrup and peanut butter for a Reese's-like flavor!) on the bottom and partially up the side of each wrapper.Freeze until hardened, about 1-2 hours.

3) Fill with low-fat banana yogurt (any flavor works though, be creative!). Over with foil and make a slit for each popsicle stick. Insert sticks and freeze again for 3-4 hours or until solid. Peel off wrappers, thaw *just* a little and serve.

Healthy, easy, and yummy! You can even personalize each cupcake with different flavors or customize them for special diet needs.  If you try this, comment here in this post and let me know how it went, what changes you may have made and/ or what would you like to do differently!
